Chocolate Fondant : )

I was really shocked when I found out how simple they are to make! Shout to my friend Liam who showed me his Fondant’s (oioi). I’ve never had one of mine go wrong, sorry to all the CDWM contestants that fail at this.

Chocolate Fondant

* Serves 4

Ingredients

* 100g unsalted butter, plus extra to grease

* 100g good quality dark chocolate (at least 70% cocoa solids), in pieces
* 2 free range egg

* 2 free range egg yolk
* 120g caster sugar

* 100g plain flour* Icing sugar to dust
* Vanilla ice cream to serve (sloppy lactose free in my pic lol)

Method

I usually make it the day before and leave it in the fridge, this makes it kinda cold, that’s why I preheat the over to it’s highest and then turn it to around 180/200′c when the fondant goes it. (If you intend it to go in the oven, same day, then 160′c should be fine)

1. Butter two large ramekins (slightly melt the butter it helps), then dust liberally with cocoa, shaking out any excess.

2. Slowly melt the chocolate and butter in a small bowl set over a pan of hot water, then take off the heat and stir until smooth. Leave to cool for 10 minutes.

3. Electric whisk/strong arm, whisk whole egg, egg yolk and sugar together until pale and thick, then slide in the chocolate mixture. Sift flour over the mixture, fold in slowly, using metal spoon.

4. Divide mixture in to ramekins and bake for 12 minutes.

5. Turn the chocolate fondants out on to warmed plates. Dust the tops with icing sugar and serve with a spoonful of vanilla ice cream.
